Bengali Rasgulla recipe – sponge rasgulla | Perfect recipe for spongy rasgullas

Bengali Rasgulla is one of the popular Indian sweets recipes that is made using paneer !!!! Here i am sharing the perfect recipe for making it at home ..

Bengali Rasgulla Recipe :

1 litre milk
1 lemon juice
1 & 1/4 cup sugar
5 cup water
1/2 tbsp Sooji

To be added to the chasni later :
1/4 cup sugar
1/2 cup water


First make paneer with milk.Heat milk on heavy bottom pan….BOil on medium flame…..once it boil add lemon juice….wait till milk curdled….now strained mixture using musclin cloth….
wash properly with water so that lemon flavor goes out of paneer…now strain excessive water pressing slowly or hang paneer for 20 mins till water completely drained.
Knead paneer till it become smooth in texture ,add 1/2 tbsp sooji ….once again knead it well..make small smooth balls….
(to check paneer texture take a small portion ,rub on palm & make a ball if u r able to make smooth ball paneer kneaded properly)
Now boil 5 cup water adding 1 & 1/4 cup sugar in pressure cooker …once boils add paneer balls slowly in pressure cooker…..cover lid wait for a whistle ….after one whistle cook on slow flame & let it cook till 8 – 10 mins….release the pressure itself….now take a bowl of clean water & drops rasgullas in it….
In the meanwhile add extra 1/4 cup sugar & 1/2 cup water in chasni..boil it & come to room temp…strain this chasni in bowl…gently squeeze out rasgullas from plain water & drop into chasni….keep in refrigerator for 2-3 hrs…Serve chilled !!!!
