Oil-Free Taco Fries
1 large sweet potato
2-3 tablespoons taco seasoning
(sprinkle of salt if taco seasoning doesn’t have salt already)

Preheat oven to 400 degrees.

Wash sweet potato, then cut into fries, and transfer to a bowl. Add taco seasoning and toss until well combined. Fries should be generously coated.

Spread in an even layer on a parchment paper lined cookie sheet and bake for 20 minutes or until fork tender and lightly browned. (You may need to toss halfway through to ensure they get crispy)

Oil-Free Vegan Cheese Sauce
1/4 cup cashew butter
1/4 cup nutritional yeast
1/4 cup water
1 tsp onion powder
1 tsp garlic powder
1/2 tsp salt (add more if needed)
1/4 tsp cayenne pepper

Combine ingredients in a blender and blend until smooth. I usually make double this recipe and store left overs in the fridge for 2-3 days. Leftovers are great on tacos, salads, or with fresh veggies as a snack. Note the cayenne pepper doesn’t add a ton of heat to this sauce because it’s such a small amount but it’s important because it does a great job of bringing out the flavor of these cheese dip so I wouldn’t skip it!

VEGAN Dark Chocolate Raspberry Covered Pretzels
1/2 cup vegan dark chocolate chips
5-6 teaspoons raspberry jam
1/4 cup unsweetened almond milk

Combine dark chocolate chips, raspberry jam, and almond milk in a bowl. Microwave for 30 seconds. Stir and and microwave for another 20ish seconds if needed until completely combined. Careful not too overheat.

Coat pretzels with chocolate and place on a non-stick cooling rack or on a parchment paper lined cookie sheet.

While the chocolate is still wet, top with whatever toppings you like. I like using hemp seeds, chopped nuts, shredded coconut, or a drizzle of almond butter.

Freeze for 30 minutes to set and then enjoy!

If jam isn’t your thing, try adding 1-2 tablespoons of peanut butter instead of raspberry jam or just skip it all together for a simple dark chocolate flavor.
