水煮鱼 Water cooked fish (Sichuan boiled fish) is an authentic Sichuan dish. As per title; this dish is cooked in water with plenty of chilli and pepper corn. Below is my recipe for this popular Chinese dish.
Take the sea bass off the bone and cut it into fillets (see video for tutorial) and marinate using ingredients in part 1 for 20 minutes.
Ensure the wok is hot and dry; fry the dried chilli and Sichuan pepper corn in low heat for about 5-6 minutes until you can smell the spice coming out and set aside in a bowl.
Next heat a wok with some vegetable cooking oil and add the onion and ginger; stir fry for a few minutes in medium heat before adding 500ml of water. Add the rest of the ingredients from part 3 and turn heat to high.
When the water boils; turn heat down to medium and add the sea bass. Let it cook in medium heat for 2-3 minutes and pour the contents in a large bowl with some bean sprouts at the base.
Sprinkle the fried Sichuan pepper corn, chilli and chilli powder over the bowl.
Heat 3 tablespoons of oil until it becomes very hot and pour it onto the content.
Finish by topping it with mint and finely chopped spring onion
1 sea bass
2 tablespoon cold water
1 tablespoon potato starch
Dash of wine, white pepper powder & sesame oil
6 dried finger size chillies (cut into pieces)
1 large tablespoon Sichuan pepper corn.
1/3 teaspoon of chilli powder!
Handful of fresh bean sprouts
30g onion & fresh ginger
1 teaspoon salt & MSG
2 tablespoon hot bean sauce and chilli oil
Dash of wine & white pepper powder
Some fresh mint leaf & spring onion
3 tablespoon hot oil!
